Vanillin is the main ingredient of the vanilla pod and is responsible for the characteristic flavor and aroma. Vanilla beans coming from Madagascar have a vanillin ratio that is approximately 1.8% of the weight of the vanilla bean. The average vanilla bean contains 60,000 seeds. Madagascar beans graded “Prime Triple A’s,” are allowed to mature on the vine an extra week and grow to as long as 8 3/4-inches containing 90,000 seeds. These represent a little less than 2% of the crop.
